Over the course of two seasons of With Love, Meghan, the Duchess of Sussex has welcomed a parade of world class chefs, bakers, and other culinary world personalities to her home kitchen. Her Christmas special, With Love, Meghan: Holiday Celebration, has been no exception.

In the new episode that premiered this week, Meghan welcomed Tom Colicchio, the Top Chef judge and co-founder of New York's acclaimed Gramercy Tavern, as well as Will Guidara, the former co-owner of Eleven Madison Park, which under his stewardship was named the Best Restaurant in the World in 2017.

"I know him from television, I know his book, and I am a fan," Meghan says before Colicchio arrives, noting Top Chef has been one of her favorite shows since it first debuted on Bravo in 2006. "He's just such an incredible chef and restaurateur, and he's won five James Beard Awards."

Colicchio has written several books, but his first—Think Like a Chef, published in 2007—was the one that clearly left the last impression on Meghan. "It changed how I moved through a kitchen," Meghan says. "His ideology changed how I thought like a chef. As opposed to, 'Here's a recipe, buy the ingredients, make the thing.' It was, 'What do I have? What can I make? Okay, let's do that.'"

The celebrity chef also shared one of his favorite holiday dishes to make with his family, which is a beet salad, involving a mixture of red onion, celery, artichoke hearts, black olives, and fennel, among other ingredients. Meghan promptly informed Colicchio that her husband, Prince Harry, would likely hate the salad as she notes he dislikes beets, black olives, fennel, and pickled vegetables. "He hates all those flavors, so I have not gotten to enjoy them, certainly not in a medley like that in a long time," Meghan laughs. (Harry later makes a cameo while they're cooking gumbo.)

Meghan also did a brief crafting segment with Guidara, as they prepared "Christmas crackers," a typically British tradition involving short cardboard tubes wrapped in colorful paper that can be filled with small treats and trinkets. "I'm obsessed with your book. I've given it out to so many people," Meghan tells Guidara when he walks in the Montecito set kitchen.

At the age of 26, Guidara built his reputation as one of the most influential voices in contemporary hospitality through his leadership at Manhattan's Eleven Madison Park. In Unreasonable Hospitality, he expands on the philosophy he developed during those years, arguing that memorable service comes from giving people more care and attention than they expect. The book has been widely read across creative and corporate fields, turning Guidara into a sought-after industry consultant. His approach reached a new audience through his work as a producer on FX's The Bear. He made a cameo as himself in season two and has a writing credit on season three.

"When I think about the great dinner parties I've been to over the years, I don't remember what I ate," Guidara says. "I just remember whether or not I left with my heart feeling full."
